Lovely Meals and Snacks Lately

Fluffy yogurt waffles! I added the zest of a lemon, fresh blueberries, maple syrup, and used 2% yogurt.

I made this salmon with citrus avocado salsa and potatoes recipe and absolutely loved all the flavors. I served it with fresh arugula (didn’t dress it) and used a couple pounds of russet potatoes instead of one pound baby potatoes. Don’t skip the salsa, it makes it!

A lunch hodgepodge of napa cabbage and kale from our Yellowbird CSA box with roasted radishes, sweet potatoes, and my cashew caesar dressing.
